Southern Squash Casserole

Ingredients :
4 cups yellow squash, sliced
1 small onion, diced
2 tablespoons butter
1 cup shredded cheddar cheese
1/2 cup sour cream
1 egg, beaten
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup crushed Ritz crackers
2 tablespoons melted butter

Instructions
Preheat oven to 350°F and grease a baking dish.
In a skillet, melt butter and sauté squash and onion until soft. Drain any excess liquid.
In a bowl, mix cooked squash, cheddar cheese, sour cream, egg, salt, and pepper.
Spread mixture into the baking dish.
In a separate bowl, combine crushed Ritz crackers with melted butter.
Sprinkle cracker topping evenly over the casserole.
Bake 25–30 minutes until bubbly and golden on top.
Serve warm.
