Ingredients:

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup peas (frozen or fresh)
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth (or more, depending on desired consistency)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (optional)
  • 1/2 teaspoon paprika (optional)

Instructions:

  1. Cook the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  2. Sauté the Vegetables: Add the chopped onion and minced garlic to the pot with the beef and cook for 2-3 minutes until softened.
  3. Add the Broth and Vegetables:Add the diced potatoes, corn, green beans, peas, diced tomatoes (with juice), and beef broth to the pot. Stir to combine.
  4. Season the Stew: Season with salt, pepper, thyme, and paprika. Adjust the seasoning to taste.
  5. Simmer the Stew: Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 30-40 minutes, or until the potatoes are tender and the flavors have melded together. If you prefer a thicker stew, you can mash some of the potatoes to help thicken it.
  6. Serve: Ladle the stew into bowls and serve hot. Enjoy!
