 Crispy Vegetable Fritters

 Ingredients

  • 2 medium potatoes, grated
  • 1 carrot, grated (optional but recommended)
  • 1 small onion, finely grated
  • 2 eggs
  • 3–4 tbsp all-purpose flour (or breadcrumbs)
  • 2 tbsp chopped parsley or coriander
  • 1 clove garlic, minced
  • ½ tsp black pepper
  • ½ tsp paprika
  • Salt to taste
  • Oil for frying

 Instructions

  1. Remove excess moisture
    Grate the potatoes (and carrot), place in a clean cloth, and squeeze out as much liquid as possible.
  2. Mix the batter
    In a bowl, combine potatoes, carrot, onion, eggs, flour, herbs, garlic, salt, pepper, and paprika.
    Mix until you get a thick batter.
  3. Fry
    Heat oil in a pan over medium heat.
    Spoon small portions of the mixture into the oil and flatten slightly.
  4. Cook until golden
    Fry 2–3 minutes per side until deep golden and crispy.
  5. Drain & serve
    Place on paper towels to remove excess oil.

  • Serve with garlic yogurt sauce, mayonnaise, or chili sauce
  • Great with salad or as a sandwich filling

 Tips

  • For extra crispiness, add 1 tbsp cornstarch
  • You can add tuna, minced chicken, or cheese for variations
  • Works in air fryer too: 180°C for 12–15 minutes, flipping once
