Crispy Vegetable Fritters
Ingredients
- 2 medium potatoes, grated
- 1 carrot, grated (optional but recommended)
- 1 small onion, finely grated
- 2 eggs
- 3–4 tbsp all-purpose flour (or breadcrumbs)
- 2 tbsp chopped parsley or coriander
- 1 clove garlic, minced
- ½ tsp black pepper
- ½ tsp paprika
- Salt to taste

Instructions
- Remove excess moisture
Grate the potatoes (and carrot), place in a clean cloth, and squeeze out as much liquid as possible. - Mix the batter
In a bowl, combine potatoes, carrot, onion, eggs, flour, herbs, garlic, salt, pepper, and paprika.
Mix until you get a thick batter. - Fry
Heat oil in a pan over medium heat.
Spoon small portions of the mixture into the oil and flatten slightly. - Cook until golden
