🥧 Savory Olive & Cheese Cake

📝 Ingredients:

  • 3 eggs
  • 1 cup milk (240 ml)
  • ½ cup vegetable oil (120 ml)
  • 2 cups all-purpose flour (about 250 g)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 cup sliced black olives
  • 1 cup diced mortadella or smoked turkey/ham
  • 2 tablespoons chopped parsley (optional)

👩‍🍳 Instructions:

  1. Preheat your oven to 350°F (180°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, whisk the eggs, milk, and oil until well combined.
  3. In another bowl, mix the flour, baking powder, salt, and black pepper.
  4. Gradually add the dry ingredients to the wet mixture and stir until smooth.
  5. Fold in the cheese, olives, diced meat, and parsley.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool slightly before slicing.
