Last December my oven broke right before my holiday party and I remembered my grandmother’s pralines from Louisiana. I made these No-Bake Pecan Coconut Praline Cookies and they were delicious:
1 cup chopped pecans
1 cup shredded coconut
1/2 cup brown sugar
1/2 cup butter
1/3 cup evaporated milk
2 tablespoons corn syrup
1 teaspoon vanilla extract
2 cups quick oats
Here’s how:
In a saucepan, combine brown sugar, butter, evaporated milk, and corn syrup over medium heat. Bring to a full rolling boil and let it boil for 3 minutes without stirring.
Remove from heat and stir in vanilla. Add pecans, coconut, and oats, mixing well. Keep stirring for 4-5 minutes until mixture cools and thickens.
Drop spoonfuls of the mixture onto wax paper-lined baking sheet. Let cool completely for about 1 hour until firm and set.
Store in airtight container at room temperature for up to a week.
Enjoy with a cup of coffee or cold milk!
Tip: These set best on dry, cool days. Humid weather may make them take longer to firm up!
